I have heard about these in the past and always wondered if they were any good. Today I tried out the recipe and they are amazing! The great thing is they are only 45 calories for a cup of "chips". Here is the recipe:
Ingredients:
Kale
Sea Salt
Olive Oil
Recipe:
Pre heat oven to 375. Cut kale off of stem and into bite size pieces. After that wash and dry the kale really good, I used a salad spinner to dry mine. Place on a baking sheet lined with foil. Toss with some olive oil and sea salt (I used the sea salt that is not ground up). Bake for 10-15 min, watch to make sure the kale doesn't burn. Mine took about 12 min until it was crispy.

Spinach Meatballs
I made this recipe last week and am just getting around to posting it. This is a great way to get your veggies into a meal, whether you need to hide them from your kids or your husband no one will notice. I also love these great meatballs because they are low carb. Here is the recipe:
Ingredients:
1lb ground beef
1/2 bag frozen spinach thawed
Italian seasonings
1 cup Parmesan cheese
1 egg
Recipe:
Preheat oven to 350. In a bowl mix together the ingredients and form into meatballs. Place on a baking sheet and bake 25-30 min.
These are awesome with some tomato sauce and noodles.
