Simply yummy dinner!

Thnings are finally settling back to normal, and normal for me is cooking dinner almost every night. Tonight was a wonderful simple but yummy dinner. I actually made it to the gym today so I thought I would try to cook a healthy dinner, the plan was going well untill I found the asparagus in my fridge. Immediatley I could taste hollandaise sauce in my mouth and I started drooling. So of course I went for it and decided since I was not going to cook a starch it was ok. Got love the BUTTER!!!

Here is the simple but yummy dinner we had tonight:

Chicken Recipe:
2 chicken breasts
1 cup of hot sauce (I used El Pato Red sauce)
1 cup of italian dressing
2 garlic cloves grated
salt and pepper

Recipe:

In a ziplock bag add the chicken and all of the ingredients above. Marinate for 30 min. Then grill 25-30 minutes untill juices run clear from the chicken.

Asparagus with Garlic Hollandaise Sauce:

1bunch of asparagus (with the ends trimmed off)
1 stick of butter
1garlic clove grated
1 tsp pepper
Juice of 1 lemon
2 egg yolks

Bring a large pot of salted water to a boil. Add asparagus to water and boil for 5 min. Remove asaparagus and place in a bowl of ice water to stop the cooking.

While the asparagus cools, add the stick of butter into a sauce pan, add the grated garlic and pepper also, melt over med low heat. Once melted whisk in the egg yolks and lemon juice. Continue to whisk about 3-5 min over med heat untill sauce has thickened.

Place the aspargus on a plate and drizzle the garlic hollandaise sauce over the top!

We had both the chicken and aspargus with a nice salad. It was a great meal, not to heavy but still very filling!

  1. Your dinner sounds yummy!!! I made a chicken salad for dinner tonight, simple but satisfying and I even made a chocolate pudding topped with banana slices and black berries.

    Chicken salad

    1 lb chicken tenders
    2 cloves garlic
    olive oil

    Chop garlic and saute in frying pan with olive oil, add chicken and fry until chicken is cooked thorougly, approxmiately 15 mins. Set aside and let cool.

    Chicken salad dressing:
    1 granny smith apple peeled and chopped
    1/4 cup chopped yellow onion
    1 cup mayo
    dash of salt and pepper
    1/2 teaspoon dill
    1/2 teaspoon paprika
    2 tablespoons lemon juice
    2 tablespoons apple cider vinegar
    1 teaspoon mustard
    1 teaspoon horseradish

    Mix salad dressing together and when chicken is cooled, chop and add to mixture. Mix well and add a handful of feta cheese.

    Be sure to get the nice and soft hand made rolls from your bakery!

  2. That sounds great! I haven't had pudding in forever my mom used to make it for us! My after dinner snack was cut strawberries with honey drizzled over the top.
