Time to cook!

Finally went grocery shopping and bought food we can actually cook with instead of frozen pizza, twinkies, and junk food. I am so excited about cooking, since I have been hurt the past three weeks I have only cooked one dinner and fried rice. I think I am having withdraws from cooking lol. I love grocery shopping too, I never go with a list or meal plans I just get a bunch of food bring it home and see what I can do with it. Ok I plan a little bit but not too much. I did buy yellow and red bell peppers to make stuffed peppers one of my favorites:

Ingredients:
4 bell peppers (which ever color you like and try to find the ones that will stand up by themselves)

1lb ground beef,chicken, or turkey
2 garlic cloves grated or chopped
half a yellow onion chopped
Extra Virgin Olive Oil
can of green chile chopped tomatoes
2 cups fresh chopped spinach (you can always use frozen instead)
Shredded cheddar cheese

Recipe:
Preheat oven to 375
Sautee chopped onions and garlic in evoo over med heat add meat once the onions have cooked down. While meat is browing cut off the tops of the bell peppers and clean out the seeds. Once the meat is cooked through add the can of tomatoes and chopped spinach, cook untill spinach is wilted down. Fill the bell peppers with the meat mixture. Add the shredded cheese to the top of the peppers and bake untill cheese is melted and bubbly, about 15 min.

This is one of my favorite dinners and the left overs are also great. After I cook this the next morning I love to take one of the left over peppers heat it up and place a fried egg on top sooo good. I love to put fried eggs on top of anything thou.

  1. Really Fried Eggs on EVERYTHING!! I would like to challenge that. This recipe sounds great. I think I might have to convince James to try it. And I love to go grocery shopping so if you ever need a buddy Rhyan and I are there at least once a week!
